A Day in the Life of a Sanctuary Oyster

Far from modern civilization and the perils that come with development is an idyllic biosphere reserve along the central Pacific Coast of Baja California where our oysters grow and thrive. First, we must start out with the extreme importance of the location of our growing fields. The El Vizcaino Biosphere Reserve is a UNESCO World Heritage site and is home to a complex ecosystem that supports and protects reproduction sites for many threatened species including the once endangered North Pacific Grey Whale. This is a fact we celebrate with high honor on Sanctuary Oyster brand packaging that states, "Raised by Whales".

 

Specifically, Laguna San Ignacio has a great inflow and outflow of water that allow us to use our unique above-seabed growing technology in the intertidal areas of the lagoon. Our oysters are packed in mesh bags and placed on racks, lifting them off the seabed, protecting them from predators. This also allows them to grow larger with deep cups as they only have to concentrate their precious energy on filtering the nutrients out of fresh, clean water vs mud, silt, sand. They are raised just high enough to prevent the growth of epiphytes, but low enough that they are covered by the cool waters of the rising tide.

 

As the tide flows in, nutrient-rich waters from various upwellings bathe our oysters in clean, cold, nourishing water from deep in the ocean that is packed with phytoplankton allowing our filter-feeders to soak up nutrients and cleanse themselves. The result is a clean, sweet and light flavor profile with tender meat. As the tide flows out the oysters are out of the water for one to three hours, training them to live for longer periods outside the water by clamping shut and storing clean seawater between their valves. Come harvest, they’ll be ready to be delivered fresh to oyster-lovers far and wide.
