Oysters Are Animals Too | Why We Let Our Oysters Have a Summer Vacation!

At Sanctuary Oysters, we are dedicated to providing our customers with the freshest, most sustainable and mouthwatering Pacific oysters in the world. That’s why every year, we close our doors in the warm summer months for quality control. As a company we believe it’s necessary to take a step back to ensure that we give our oysters a summer vacation too!

 

This begs the question; can you eat oysters during this summer season? Yes. However, quality is a concern for Sanctuary Oysters during the warmer months due to fluctuating water temperatures. Farmed and harvested in the pristine waters of the El Vizcaino Biosphere Reserve, we aim to make certain that our production methods complement the environment and season changes.

 

So, we stop selling our oysters at the end of summer due to naturally warmer water temperatures, which result in weaker and thinner oysters. Due to the lifecycle of our oysters, they’re not as tasty as they would normally be. This change in water temperature causes the oysters to stress and use more of their energy to survive. As a result, many oysters die during their journey from farm to table because the shelf life is shorter.

 

That’s why make the bold decision to hold back on distributing our oysters to restaurants and distributors because these months are an important time for them to rest. We want our full-flavored oysters to develop a firm flavor like in the colder months, when they are shucked and deliver a leaner, solid texture leaving a bolder flavor for all to enjoy.

 

During this downtime, we’re able to give work life balance to our employees as well. This allows our employees to take well-deserved time off to volunteer or visit the doctor, while always keeping a working rotation going. This gives us the perfect opportunity to host our companywide BBQ party at the farm where the management team cooks for the employees and gifts and acknowledgments are given to employees for their support!
